For a place to take refuge after work, to lounge on a warm summer night, or to simply fulfill a craving for Mexican food, Pink Taco stands as an ideal option located in the action of Century City.

Best of all, it doesn’t matter which day of the week it is: customers can enjoy Pink Taco’s happy hour seven days a week from 3 pm to 7 pm.

The happy hour menu naturally includes the quintessential Mexican food and drink items, including $3 beer, $5 margaritas, sangria, wine, beer with a shot of Sauza (anejo, blanco, or reposado), and well cocktails, and $7 nachos (chicken, carnitas, carne asada), tacos (portobello or pink), queso, and guacamole and chips.

Manager and mixologist Eric Livingston not only elaborated on the various items available on the happy hour menu, but also demonstrated the process behind creating Pink Taco’s signature cocktails.

Livingston personally concocted the restaurant’s homemade margarita, paloma, and sangria, all of which are fitting drinks for the current summer season.

All three cocktails utilized very basic ingredients, but it was clear from the customers’ reactions that the end result was a refreshingly delicious mixture of juice and liquor.

“One of my favorite parts of being a mixologist is being able to take the simplest ingredients, combine them in correct quantities, and have the result be a magical combination,” Livingston said.

The house margarita consists of two ounces of tequila, one ounce of lime juice, one ounce of triple sec, and a half ounce of agave syrup over ice. Meanwhile the paloma was technically even easier to make with its two ounces of tequila, three ounces of ginger beer, and half a grapefruit’s worth of juice.

As he swiftly and effortlessly whipped up the restaurant’s signature cocktails, he jokingly explained the two requirements for making a good drink: “A) Good tequila, and B) lots of tequila.”

But for those who are not the biggest fans of tequila, Pink Taco offers an equally appealing drink of choice: the restaurant’s homemade sangria. This iced, sweet crimson-hued drink is loaded with fresh fruit and can be ordered by the pitcher.

As far as food items go, the featured happy hour tacos are mouthwatering choices that cater to a range of customers.

The chicken-based signature pink tacos seem to be the mascot of the restaurant, whereas portobello tacos are a popular option among the vegetarian crowd. The Taco Tuesday deal features these tacos at an even more affordable price of just $3, as well as $3 margaritas.

However, Livingston answered without any hesitation when asked what his favorite happy hour menu was: “guacamole.”

This comes as no surprise, as Pink Taco’s guacamole is hand blended and made from scratch on a daily basis.

Livingston’s presence and skill level must be a breath of fresh air to the restaurant, as he joined the Pink Taco team just eight months ago. The sheer fun and joy that he finds in his job, however, is contagious, and undoubtedly translates to the relationships Pink Taco fosters with its customers.

“I love learning new things, trying different spirits, and experimenting with various combinations,” Livingston said.

One of his favorite parts about being a mixologist is “when a customer asks [him] what they should order and [he is] able to introduce a drink that they end up loving.”

Livingston has always taken an interest in the hospitality industry, as he finds his passion in the pace, action, vibe, and overall positive energy of the field.

Customers can likely find this friendly mixologist on the picturesque outdoor patio that Pink Taco boasts.

Pink Taco is located on the second level of the Westfield Century City at 10250 Santa Monica Boulevard, Century City.
